For soft cookies:
-> use brown sugar: it retains moisture and gives a gooey center.
For crispier cookies:
-> prefer white sugar: drier texture and crunchy edges.
The perfect mix:
-> 50% brown sugar + 50% white sugar = soft in the center + crunchy around.
